Curd can be made of any fruit while desserts can be made keto. So here it is, a keto lemon curd that can be spread on keto desserts. Yippee!!!

As I most recently have some time, I had been surfing on the web a few days ago. Trying to get fresh, interesting ideas, inspiring dishes that I’ve never tried before, to impress my loved ones with. Looking for a while unfortunately couldn’t come across any interesting things. Right before I wanted to give up on it, I discovered this delightful and easy dessert simply by accident over Suncakemom. The dessert looked so scrumptious on its pic, it required instant actions.

It was easy to imagine how it is made, how it tastes and just how much my husband will probably enjoy it. Mind you, it is quite simple to delight the man when it comes to cakes. Anyway, I got into the website and simply followed the step-by-step instuctions that were combined with great snap shots of the method. It just makes life less difficult. I can suppose it is a slight effort to take snap shots in the middle of cooking in the kitchen as you may typically have gross hands so I highly appreciate the commitment she placed in to build this post .

I had been tweaking the initial mixture create it for the taste of my loved ones. I can mention it absolutely was a great outcome. They loved the taste, the structure and loved having a delicacy such as this in the middle of a lively week. They quite simply asked for lots more, many more. Pour a cup of water in a medium size saucepan and place it on the cooktop to boil.

Grate 1 lemon’s zest.

Squeeze 4 lemon to get the juice.

Separate eggs as we only need the yolks.

Put yolks into a metal mixing bowl.

Pour the juice, lemon zest, a teaspoon of stevia or sweetener of choice and a pinch of salt into the mixing bowl as well then mix it together.

Turn cooktop to low heat and place the mixing bowl on top of the simmering water.

Whisk yolks continuously until completely blended and keep whisking it as the curd cooks and becomes thick. It takes about 5 minutes.

Remove mixing bowl from the heat and wait for a couple of minutes to cool then put butter into the curd as well.

Whisk them together. Try for sweetness and add more sweetener if desired. It shouldn’t look like this:

Pour curd into a jar or a bowl to store it in a cool place.

Use it with sweet scones, muffins, pancakes, doughnuts, pound cakes or biscuits.
